    fennel bulb, chopped
  • 1/2 c
    chopped onion
  • 2 tsp
    olive oil
  • 2 c
    hot water
  • 4 c
    reduced-sodium chicken broth
  • 1 1/2 c
    chopped carrot
  • 1 tsp
    salt and pepper
  • 3/4 tsp
    deied thyme
  • 1/2 tsp
    dried basil
  • 2 c
    cubed cooked chicken breast
  • 1/2 c
    uncooked orzo pasta

How to Make Italian Chicken Soup


  1. In dutch oven, saute fennel bulb and onion in oil until fennel is tender. Add the next 7 ingredients. bring to a boil. reduce heat; cover and simmer 15 minutes.
  2. Stir in chicken and orzo cook for 20 minutes or until orzo is tender. serve
