This is a simple and easy soup to prepare. Great when trying to eat light or a nice appetizer soup. Also great when not feeling well, and a hot bowl of brothy soup is all you want.
This recipe came from a pamphlet style cookbook titled "Chinese Cookery" 1973

  • 1
  • 1/2 tsp
  • 3 c
    chicken broth
  • pinch
    of sugar
  • 1/4 tsp
  • 1/8 tsp
    sesame oil
  • 1 small
    scallion, minced
  • 2 tsp
    finely chopped chives

How to Make Egg Drop Soup


  1. In a small bowl, beat the egg with the water.
  2. Bring chicken broth to a simmer and add the sugar, salt and sesame oil.
  3. Stirring constantly, add the egg to the simmering broth.
    As you stir, the egg will form strings.
  4. Stir in the scallion and remove from the heat.
    Serve in individual bowls and garnish with chives.
