Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound chicken breast halves, skinless and boneless
  • 1 1/2 cups thinly chopped onion
  • 1 - 8 ounce package mushrooms chopped
  • 1 medium carrot shredded
  • 1 tablespoon minced garlic
  • 1/2 cup white rice
  • 1 - 14 ounces chicken boulion soup prepared
  • 1 cup water
  • 1/2 teaspoon ground black pepper
  • 2 - 12 ounce cans evaporated milk
  • 2 tablespoons all purpose flour
  • 4 cups fresh spinach copped
  • 3 tablespoons lemon juice

How To Make cream of cheese and rice with veggies

  • Step 1
    in a medium stew pot on medium high heat cook chicken for 12 to 15 min turning over once after half of the cooking time. put chicken on plate to cool. when cool coarsley shred chicken
  • Step 2
    Meanwhile, add onion, mushrooms, carrot, and garlic to the pot and cook 5 minutes, stirring occasionally. add rice, cook for 1 minute more add boullion, water, and pepper. Bring to boiling, reduce heat to simmer, covered for 15 minutes.
  • Step 3
    in a small bowlstir together 1 can of the milk and flour, stir into pot. cook stir till bubbly. Stir in spinach and the shredded chicken, simmer, uncovered for 6 min. stir in lemon juice and black pepper. serve
