Ingredients
- 1 1/2 pounds chicken thighs, skinless and boneless or breasts, i use both
- 1 package matchstick carrots
- 1 package brocoli slaw
- 32 ounces chicken broth
- 32 ounces vegetable broth
- 1 - large onion, diced fine
- 4 stalks celery, diced fine
- 8 ounces shitake mushrooms, fresh
- 1/2 cup soy sauce
- 1 tube miso paste
- 1/4 cup shredded fresh ginger
- 1 package lo mein or rice/buckwheat noodles, uncooked
- 1 bunch green onions, sliced
- 2 tablespoons black sesame seeds
- 2 tablespoons coconut oil
- 1 teaspoon sesame oil
- 1 package wonton strips for salads
How To Make chinese chicken noodle soup

Step 1cut your chicken into 1 inch cubes or strips

Step 2stir fry your chicken in the coconut oil and sesame oil

Step 3when chicken is halfway done, add, the onions, carrots, celery, mushrooms, ginger and half of the soy sauce

Step 4when chicken is done, add both of the broths, the miso paste and bring to a boil, reduce heat and simmer for 15 minutes.

Step 5Now add the broccoli slaw and the noodles

Step 6cook until noodles are done. If too thick, add filtered water or more veggie broth. Add more soy sauce if needed.

Step 7serve with green onions, sesame seeds and wonton strips.
