Really good and very healthy. You can make it mild or spicy. I know you will love it. Its a great one pot dish.

Ingredients

1 1/2 lb
chicken thighs, skinless and boneless or breasts, i use both
1 pkg
matchstick carrots
1 pkg
brocoli slaw
32 oz
chicken broth
32 oz
vegetable broth
1
large onion, diced fine
4 stalk(s)
celery, diced fine
8 oz
shitake mushrooms, fresh
1/2 c
soy sauce
1 tube(s)
miso paste
1/4 c
shredded fresh ginger
1 pkg
lo mein or rice/buckwheat noodles, uncooked
1 bunch
green onions, sliced
2 Tbsp
black sesame seeds
2 Tbsp
coconut oil
1 tsp
sesame oil
1 pkg
wonton strips for salads

How to Make Chinese Chicken Noodle Soup

Step-by-Step

  • 1cut your chicken into 1 inch cubes or strips
  • 2stir fry your chicken in the coconut oil and sesame oil
  • 3when chicken is halfway done, add, the onions, carrots, celery, mushrooms, ginger and half of the soy sauce
  • 4when chicken is done, add both of the broths, the miso paste and bring to a boil, reduce heat and simmer for 15 minutes.
  • 5Now add the broccoli slaw and the noodles
  • 6cook until noodles are done. If too thick, add filtered water or more veggie broth. Add more soy sauce if needed.
  • 7serve with green onions, sesame seeds and wonton strips.
