I have no idea where I got this recipe or if I just made it up. Its great on a cold evening or to make to take to a loved one who's suffering with a cold or flu or just any time. Super easy to make!

Ingredients

  • 1 teaspoon olive oil
  • 1/2 cup onion, minced
  • 1 cup carrots, scraped and diced
  • 1 cup celery, diced
  • 4 cloves garlic, minced
  • 1/8 cup cup flour
  • 6 cups chicken broth
  • 2 cups potatoes, peeled and diced
  • 3 - chicken breasts, cooked and cut up
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh, chopped parsley

How To Make chicken stew

  • Step 1
    Heat oil over medium heat in a large sauce pan. Add onions, carrots, celery and garlic. Cook until onions are tender.
  • Step 2
    Sprinkle flour over vegetables and cook about 1 minute. Stir in chicken broth and potatoes. Cover and cook until potatoes are tender, about 20 minutes. Add chicken, cover and simmer until thickened
  • Step 3
    Add salt, pepper and fresh parsley and stir to blend. Serve with crusty bread & butter!
