I have no idea where I got this recipe or if I just made it up. Its great on a cold evening or to make to take to a loved one who's suffering with a cold or flu or just any time. Super easy to make!

Ingredients
- 1 teaspoon olive oil
- 1/2 cup onion, minced
- 1 cup carrots, scraped and diced
- 1 cup celery, diced
- 4 cloves garlic, minced
- 1/8 cup cup flour
- 6 cups chicken broth
- 2 cups potatoes, peeled and diced
- 3 - chicken breasts, cooked and cut up
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup fresh, chopped parsley
How To Make chicken stew

Step 1Heat oil over medium heat in a large sauce pan. Add onions, carrots, celery and garlic. Cook until onions are tender.

Step 2Sprinkle flour over vegetables and cook about 1 minute. Stir in chicken broth and potatoes. Cover and cook until potatoes are tender, about 20 minutes. Add chicken, cover and simmer until thickened

Step 3Add salt, pepper and fresh parsley and stir to blend. Serve with crusty bread & butter!
