I have no idea where I got this recipe or if I just made it up. Its great on a cold evening or to make to take to a loved one who's suffering with a cold or flu or just any time. Super easy to make!

olive oil
1/2 c
onion, minced
1 c
carrots, scraped and diced
1 c
celery, diced
4 clove
garlic, minced
1/8 c
cup flour
6 c
chicken broth
2 c
potatoes, peeled and diced
chicken breasts, cooked and cut up
1/2 tsp
1/4 tsp
1/4 c
fresh, chopped parsley

How to Make Chicken Stew


  • 1Heat oil over medium heat in a large sauce pan. Add onions, carrots, celery and garlic. Cook until onions are tender.
  • 2Sprinkle flour over vegetables and cook about 1 minute. Stir in chicken broth and potatoes. Cover and cook until potatoes are tender, about 20 minutes. Add chicken, cover and simmer until thickened
  • 3Add salt, pepper and fresh parsley and stir to blend. Serve with crusty bread & butter!
