Ingredients
- 1 pound chicken breast or thigh boneless & skinless
- 1 small onion, chopped
- 1 small green pepper, chopped
- 6 cups chicken broth
- 16 ounces fire roasted tomatoes
- 16 ounces black beans in water & salt, drained
- 8 ounces tomato sauce
- 1 tablespoon corn meal
- 1 teaspoon cayenne pepper
- - salt/pepper to taste
- - tortilla chips
- - sour cream
- 1 tablespoon olive oil
- 1 sprig cilantro
How To Make chicken fiesta tortilla soup

Step 1Start by boiling the chicken about 15-20 mins.

Step 2In a large pot, saute the onions and peppers in the olive oil.....shred the chicken and add in , stir then add the fire roasted tomatoes and the drained black beans.

Step 3mix all together, then add the chicken broth, and tomato sauce...combine everything and simmer about 15 mins.

Step 4add in the corn meal, cayenne pepper,cilantro, salt & pepper...serve in a bowl and top with sour cream and tortilla chips.
