  • 2 tsp
    canola or vegetable oil
  • 1 lb
    boneless, skinless turkey or chicken breasts, cut in cubes
  • 1 1/2 c
    chopped celery and chopped carrots
  • 1 c
    chopped onions
  • 4 c
    low-sodium, reduced fat chicken broth
  • 1 can(s)
    tomatoes undrained, and cut up (28 oz)
  • 1/3 c
    pearl barley, uncooked
  • 3/4 tsp
    dried marjoram
  • 1/2 tsp
    each ground thyme, ground sage, salt and black pepper
  • 1/4 c
    chopped fresh parsley

How to Make Best Barley Soup


  1. Heat oil in a large saucepan over medium-high heat. Add turkey cubes and cook until no longer pink.
  2. Add all remaining ingredients. Mix well. Bring soup to a boil over high heat. Reduce heat to low. Cover and simmer for 30-35 minutes, until turkey and barley are tender.
