Ingredients
- 2 teaspoons canola or vegetable oil
- 1 pound boneless, skinless turkey or chicken breasts, cut in cubes
- 1 1/2 cups chopped celery and chopped carrots
- 1 cup chopped onions
- 4 cups low-sodium, reduced fat chicken broth
- 1 can tomatoes undrained, and cut up (28 oz)
- 1/3 cup pearl barley, uncooked
- 3/4 teaspoon dried marjoram
- 1/2 teaspoon each ground thyme, ground sage, salt and black pepper
- 1/4 cup chopped fresh parsley
How To Make best barley soup

Step 1Heat oil in a large saucepan over medium-high heat. Add turkey cubes and cook until no longer pink.

Step 2Add all remaining ingredients. Mix well. Bring soup to a boil over high heat. Reduce heat to low. Cover and simmer for 30-35 minutes, until turkey and barley are tender.
