Ingredients

  • 2 teaspoons canola or vegetable oil
  • 1 pound boneless, skinless turkey or chicken breasts, cut in cubes
  • 1 1/2 cups chopped celery and chopped carrots
  • 1 cup chopped onions
  • 4 cups low-sodium, reduced fat chicken broth
  • 1 can tomatoes undrained, and cut up (28 oz)
  • 1/3 cup pearl barley, uncooked
  • 3/4 teaspoon dried marjoram
  • 1/2 teaspoon each ground thyme, ground sage, salt and black pepper
  • 1/4 cup chopped fresh parsley

How To Make best barley soup

  • Step 1
    Heat oil in a large saucepan over medium-high heat. Add turkey cubes and cook until no longer pink.
  • Step 2
    Add all remaining ingredients. Mix well. Bring soup to a boil over high heat. Reduce heat to low. Cover and simmer for 30-35 minutes, until turkey and barley are tender.
