My family loves this on a cold night. It's cheap, easy and filling. I serve mine with Mistaken Biscuits for an added comfort.

Ingredients

  • 1 pound leftover meatloaf
  • 1 can diced tomatoes
  • 1 - med. onion, chopped
  • 1 quart beef broth
  • 1/2 package pasta of choice
  • 1 teaspoon garlic powder
  • - salt and pepper to taste

How To Make meatloaf soup

  • Step 1
    combine all ingredients in a pan except pasta.
  • Step 2
    bring to a boil and turn down to a simmer, let cook until onions are tender.
  • Step 3
    add pasta and heat through.
  • Step 4
    serve with Mistaken Biscuits for an added comfort.
