I love the smells that this stew emits and it's such a warming stew. Just add some biscuits for a meal.

Ingredients

  • 3 tablespoons flour
  • 2 pounds cut up beef stew meat
  • 1/2 stick butter
  • 2 cups beef broth
  • 1 cup brewed black coffee
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 - potatoes, quartered
  • 6 - carrots, cut into chunks
  • 3 - onions, quartered
  • 1/4 cup dried barley

How To Make dad's special beef-barley stew

  • Step 1
    Place flour in plastic, resealable bag. Add beef to bag and shake to coat. Melt butter in lg pot over med-high heat.
  • Step 2
    Brown beef on all sides. Add broth, coffee, thyme, salt and pepper. Bring to a boil. Reduce heat to low.
  • Step 3
    Add barley, simmer 1 hr. Add potatoes, carrots and onions. Simmer 1 more hour, stirring occasionally.
