spicy sausage and pasta soup

This is a family favorite. I only started experimenting with soup's the last couple of years.

Ingredients

  • 2-15 ounces canned garbanzo beans (not drained)
  • 4 tablespoons olive oil
  • 2 pounds ground mild italian sausage (i use the new york style, in the chub)
  • 2 teaspoons dried rosemary
  • 4 cloves garlic ,minced
  • 1 teaspoon crushed, red pepper flakes
  • 1/3+ 1 Tbs cups tomato paste
  • 2 quarts low sodium chicken broth
  • 1 pound pasta of choice, (small shells, broken spaghetti)
  • 1 cup parmesan cheese
  • 1 package frozen spinich

How To Make spicy sausage and pasta soup

  • Step 1
    In a medium soup pot over medium hear, add olive oil and brown sausage. Add rosemary, red pepper, and garlic. Mix in tomato paste.
  • Step 2

  • Step 3
    Add Beans, broth and pasta. Simmer for 25 minutes. I add the spinach, after about 10 minutes
  • Step 4
    Mix in the 2/3 cup of cheese. Reserve the rest for topping the soup, when you serve it.
  • Step 5
    Serve hot with remaining cheese.
