An excellent alternative to the standard turkey soups that tend to get made after a holiday feast, this will remind your family and guests of warmer times! This version is mild enough that the kids have no problems with it. If you prefer things spicy (as I do!) then you can add your favorite form of heat in the pot or at the table! Enjoy!!

Ingredients

  • 16 cups turkey stock
  • 2 cups turkey pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, crushed
  • 1 large onion - chopped
  • 1 - red pepper - chopped
  • 2 cans rotel tomatoes and chiles (10 oz mild)
  • 2 cans pinto beans - drained
  • 1 can diced tomatoes (14 oz)
  • 1 pound frozen corn kernels
  • 1 can chopped green chiles (4.5 oz)
  • 2 teaspoons green chile powder (mild)
  • 1 tablespoon hatch chile powder (mild)
  • 2 tablespoons salt
  • 2 tablespoons sugar
  • 1 tablespoon cumin
  • 2 teaspoons dried cilantro
  • 1 teaspoon ground black pepper
  • 1/2 cup lime juice
  • 1 bag tortilla chips
  • 8 ounces shredded cheddar

How To Make turkey tortilla soup

  • Step 1
    Heat the olive oil in a skillet. Saute the Garlic, Onion and Red Pepper for 4-5 mins - set aside
  • Step 2
    In a large soup pot, combine Stock, Turkey, all canned ingredients, sauteed vegetables, lime juice and all seasonings/spices.
  • Step 3
    Simmer for 1 hour
  • Step 4
    Serve over crushed tortillas and garnish with shredded cheddar. Enjoy!!
