navy bean & ham soup

working outside the home found me with no time to start dry beams from scratch. adding to the mix my husband is a Celiac and must have a gluten free soup. so no Campbell. We missed having bean soup and after many trials & errors this simple recipe hit the spot in flavor.

Ingredients

  • 2 cans navy beans
  • 1 1/2 cups chopped ham
  • 1/2 cup chopped onion
  • 1 cup thinly sliced carrots
  • 1 quart water
  • 1 tube knorr homestyle chicken (concentrated)
  • 1 - bay leaf
  • 2 tablespoons salt free season mix
  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 1/4 cup instant potato flakes, dry

How To Make navy bean & ham soup

  • Step 1
    over medium heat. to a large pan. add olive oil and butter. melt
  • Step 2
    add onions & carrots. saute until onions become translucent. add ham, cook until starts it brown.
  • Step 3
    add 2 cans of navy beans juice and all. add water, tube of knorr chicken concentrate, bay leaf, spices. bring to a boil. boil 30 minutes, stir often.
  • Step 4
    turn pot to low heat, cover. simmer 30 min. stir often.
  • Step 5
    remove the bay leaf. then add in the instant potato. stir, this should thicken the soup. check the flavor & adjust seasoning as needed. enjoy
