working outside the home found me with no time to start dry beams from scratch. adding to the mix my husband is a Celiac and must have a gluten free soup. so no Campbell. We missed having bean soup and after many trials & errors this simple recipe hit the spot in flavor.

Ingredients

  • 2 can(s)
    navy beans
  • 1 1/2 c
    chopped ham
  • 1/2 c
    chopped onion
  • 1 c
    thinly sliced carrots
  • 1 qt
    water
  • 1 tube(s)
    knorr homestyle chicken (concentrated)
  • 1
    bay leaf
  • 2 Tbsp
    salt free season mix
  • 1 Tbsp
    butter
  • 2 Tbsp
    olive oil
  • 1/4 c
    instant potato flakes, dry

How to Make Navy Bean & Ham Soup

Step-by-Step

  1. over medium heat. to a large pan. add olive oil and butter. melt
  2. add onions & carrots. saute until onions become translucent. add ham, cook until starts it brown.
  3. add 2 cans of navy beans juice and all. add water, tube of knorr chicken concentrate, bay leaf, spices. bring to a boil. boil 30 minutes, stir often.
  4. turn pot to low heat, cover. simmer 30 min. stir often.
  5. remove the bay leaf. then add in the instant potato. stir, this should thicken the soup.
    check the flavor & adjust seasoning as needed.
