Ingredients

  • 1 pound italian sausage links
  • 2 cups dry white wine
  • 2 - cloves minced fresh garlic
  • 1 - medium onion, finely chopped
  • 5 cups chopped cabbage
  • 1 can tomatoes (28 ounces), cut up
  • 1 cup water
  • 1 can green chile peppers, rinsed, seeded, chopped

How To Make yummy sausage soup

  • Step 1
    Using the tines of a fork, prick the sausage casing several times.
  • Step 2
    Cut the sausage in 1-inch pieces; place in a large mixing bowl.
  • Step 3
    For marinade, add wine and garlic to sausage pieces.
  • Step 4
    Marinate for 30 minutes, then drain sausage pieces, reserving marinade.
  • Step 5
    In a dutch oven or large kettle, cook the sausage and onion until the meat is brown and onion is tender.
  • Step 6
    Drain off fat and add reserved marinade.
  • Step 7
    Bring to boiling; reduce heat.
  • Step 8
    Simmer, covered, for 20 minutes.
  • Step 9
    Stir in cabbage, undrained tomatoes, water and green chile peppers.
  • Step 10
    Simmer, covered, for 20 minutes more, stirring occasionally. (Cool and refrigerate soup at this point, if planning to reheat).
