WONTON SOUP BY SALLYE
4 ozall purpose flour
2 Tbspolive oil
4 ozchopped fresh spinach
4 ozground pork, cooked
1/2 tspsoy sauce
1/2 tspground ginger
5 cchicken broth
2 Tbspchives or green onions, sliced thin including green part
2ribs celery, diced
1 Tbspsoy sauce
How to Make WONTON SOUP BY SALLYE
- FOR DUMPLING:
Stir flour and salt together in bowl. Add milk, oil and egg.
Knead dough until smooth
Roll out dough on floured board until paper thin
Cut into 3 inch squares
Cover with kitchen towel while preparing filling
- FOR FILLING:
Thoroughly wash spinach and remove coarse stems
Place spinach in bowl, barely cover with boiling water.
Let stand 5 minutes, then drain well. Coarsely chop with kitchen shears
Add pork, soy sauce and ginger to spinach and blend thoroughly.
Place 1 teaspoon in center of each dumpling square in a nice neat rectangular pile
Fold over dough from one side, roll up jelly roll fashion.
Press ends of roll together to seal
Bring broth to boil, add celery, wontons and soy sauce
Simmer over low heat 20 minutes
Spoon into bowls. Garnish with chives/green onions
