Ingredients
-
1 Tbspolive oil
-
1/2 mediumonion, finely chopped
-
1/4 largered pepper, finely julienned
-
1/4 largeorange pepper, finely julienned

1 mediumjalapeño pepper, seeded, ribs removed and finely julienned
-
1 mediumcarrot, shredded
-
1 1/2 Tbspfresh ginger, minced
-
2 largecloves garlic, pressed
-
1 Tbspsesame oil
-
1 cmushrooms, washed and sliced
-
1 cchar siu (chinese bbq pork), roughly chopped
-
4 clow-sodium chicken broth
-
1/4 tspred pepper flakes, or to taste

1 Tbsphoisin sauce
-
1 Tbsplow-sodium soy sauce or tamari
-
1 tspfish sauce
-
7 ozudon noodles, cooked according to package directions

1 cbean sprouts, washed and drained, for garnish
-
1 largegreen onion, sliced diagonally into 1-inch pieces, for garnish
-
1/4 cpeanuts, coarsely chopped, for garnish
-
1 Tbspfresh cilantro, for garnish

2-4 largelime wedges, for garnish
How to Make Udon Noodle Soup
- In a large saucepan over medium, heat olive oil. Add onion and sauté for 2 minutes. Add red and jalapeño peppers and sauté for 3 minutes. Add carrot and cook for 2 minutes. Add garlic and ginger and sauté for 1 minute. Add sesame oil, mushrooms and soy sauce; sauté for 2 minutes. Add broth, pork, red pepper flakes, hoisin sauce and fish sauce. Bring to a simmer then reduce heat down to low; cover and simmer for 20 minutes.
- Place cooked udon noodles at the bottom of two large serving bowls. Ladle the soup over the noodles and garnish with bean sprouts, green onions, cilantro, peanuts and lime wedge.
