Very easy to make. Keeps well in the refrigerator, but does not freeze well.

Ingredients

  • 2 teaspoons chopped garlic
  • 1/2 small onion, chopped
  • 2 tablespoons vegetable oil
  • 1 large can chicken broth (3 lbs. 1.5 ozs.)
  • 1 small package of chopped frozen spinach
  • 2 tablespoons dried basil
  • 1 package three cheese tortellini
  • 1/2 can parmesan cheese

How To Make tortellini soup

  • Step 1
    Cook garlic and onion in oil until translucent.
  • Step 2
    Add chicken broth, tomatoes, spinach and basil. Cook until spinach is tender.
  • Step 3
    Shut off heat and add tortellini.
  • Step 4
    Keep pot on burner until tortellini is done.
  • Step 5
    Add parmesan cheese
