Very easy to make. Keeps well in the refrigerator, but does not freeze well.

No-Cook or Other


  • 2 tsp
    chopped garlic
  • 1/2 small
    onion, chopped
  • 2 Tbsp
    vegetable oil
  • 1 large
    can chicken broth (3 lbs. 1.5 ozs.)
  • 1 small
    package of chopped frozen spinach
  • 2 Tbsp
    dried basil
  • 1 pkg
    three cheese tortellini
  • 1/2 can(s)
    parmesan cheese

How to Make Tortellini Soup


  1. Cook garlic and onion in oil until translucent.
  2. Add chicken broth, tomatoes, spinach and basil. Cook until spinach is tender.
  3. Shut off heat and add tortellini.
  4. Keep pot on burner until tortellini is done.
  5. Add parmesan cheese
