Ingredients
- 24 - slices pepperoni
- 1 cup chopped onion
- 6 cups chicken broth
- 9 ounces fresh or frozen cheese tortellini
- 5 ounces baby spinach
How To Make tortellini pepperoni spinach soup

Step 1Cut the pepperoni into quarter rounds and add to heavy stock pot over medium heat. Stir and let the pepperoni release some of its fat. Add chopped onion and saute till softened.

Step 2Add broth, bring to a boil, add tortellini and simmer till the tortellini floats to the top (or according to package directions)

Step 3Stir in spinach. Serve with some Parmesan shreds sprinkled on top.
