We look forward to the cooler weather to make our fall favorites. This has become one of our anticipated soups!

Ingredients

  • 2 pounds ground beef
  • 1 large onion
  • 2 cans tomatoes, petite diced with liquid
  • 2 cans rotel tomatoes and green chilies, mild
  • 2 cans corn
  • 2 cans pinto beans, with liquid
  • 2 packages lawry's taco seasoning
  • 2 packages ranch dressing dry mix

How To Make taco soup

  • Step 1
    Brown ground beef and the chopped onion. Drain and place in large pot or Dutch oven.
  • Step 2
    Add all listed ingredients.
  • Step 3
    Add a little water and cook slowly for at least 30 minutes. Longer is better.
  • Step 4
    Top with grated cheddar cheese and chopped green onions, if desired. Good with cornbread or tortilla chips.
