I found this in a low fat, quick and healthy cook booklet. It sounds good. Can't wait for peaches to be in season to try this one. Will be great as an appetizer for a brunch on a hot summer day.

Ingredients

  • 4 large peaches, peeled and chopped
  • 2 cups cantalope chunks
  • 1/4 cup lowfat buttermilk
  • 1/4 cup orange juice
  • 1 teaspoon honey
  • 1/8 teaspoon nutmeg
  • 4 - sprigs mint, for garnish

How To Make sunny peach soup

  • Step 1
    process all soup ingredients in food processor or blender intil smooth and thick
  • Step 2
    pour into a large covered container and chill at least 30 minutes.
  • Step 3
    pour into individual bowls, topped with a fresh mint sprig.
  • Step 4
    Calories:85 trace of fat 2.1 gram fiber trace cholesterol 23 mg sodium
  • Step 5
    for dairy free version, replace buttermilk with tofu.
