Ingredients For savoury sausage vegetable soup

  • 1
    link of beef sausage (i used eddy's) sliced thin
  • 1 1/2
    32 oz. cartons of chicken stock
  • 1 can
    14.5 oz fire roasted diced tomatos
  • 1 bag
    12 oz. small frozen sweet corn
  • 1 bag
    12 oz. small frozen cut carrots
  • 1 can
    15 oz. drained kidney beans, canned
  • 1 sm
    chopped onion ( eye ball it)
  • 1 bag
    1.5 lb. petite red potatoes or 4 or 5 med. size cut into fours
  • 2 Tbsp
    olive oil
  • 1 1/2 tsp
    italian seasoning
  • 2 tsp
    paprika
  • 1 tsp
    garlic salt or more to taste
  • 1 tsp
    salt or more to taste (the stock is salty)
  • 2 tsp
    black pepper
  • 2 Tbsp
    parsley flakes

How To Make savoury sausage vegetable soup

  • 1
    Saute onion in olive oil, add seasoning, canned tomatoes and 1&1/2 cartons of chicken stock. Mix and heat on medium high heat and stir occasionally.

    Add sliced sausage, beans and thawed veggies. I prefer frozen veggies and I keep the freezer stocked for cooking different recipes. Use whatever you have, it all taste good.

    Cover with lid and cook on low heat stirring occasionally for 35 - 40 min.

    Options: noodles, rice, cabbage, cauliflower, zucchini or squash. French bread is always good with any soup or stew dish.
