Ingredients
- 1 - link of beef sausage (i used eddy's) sliced thin
- 1 1/2 - 32 oz. cartons of chicken stock
- 1 can 14.5 oz fire roasted diced tomatos
- 1 bag 12 oz. small frozen sweet corn
- 1 bag 12 oz. small frozen cut carrots
- 1 can 15 oz. drained kidney beans, canned
- 1 small chopped onion ( eye ball it)
- 1 bag 1.5 lb. petite red potatoes or 4 or 5 med. size cut into fours
- 2 tablespoons olive oil
- 1 1/2 teaspoons italian seasoning
- 2 teaspoons paprika
- 1 teaspoon garlic salt or more to taste
- 1 teaspoon salt or more to taste (the stock is salty)
- 2 teaspoons black pepper
- 2 tablespoons parsley flakes
How To Make savoury sausage vegetable soup

Step 1Saute onion in olive oil, add seasoning, canned tomatoes and 1&1/2 cartons of chicken stock. Mix and heat on medium high heat and stir occasionally.

Step 2Add sliced sausage, beans and thawed veggies. I prefer frozen veggies and I keep the freezer stocked for cooking different recipes. Use whatever you have, it all taste good.

Step 3Cover with lid and cook on low heat stirring occasionally for 35 - 40 min.

Step 4Options: noodles, rice, cabbage, cauliflower, zucchini or squash. French bread is always good with any soup or stew dish.
