Ingredients

  • 1 pound sweet italian turkey sausage (i like jennie-o lean)
  • 8 cups chicken broth, low salt
  • 2 large sweet potatoes, peeled and diced small
  • 3 cups chopped kale
  • 1 cup canned cannellini bean, drained and rinsed
  • 1 large carrot, peeled and diced small
  • 1 stalk celery, diced small
  • 1 cup cooked brown rice
  • 1/2 small red bell pepper, diced small
  • 1/4 cup white wine
  • 1/2 tablespoon sugar
  • 1 teaspoon turmeric, ground
  • 1 teaspoon oregano, dried
  • 1 tablespoon parsley flakes
  • 1 tablespoon minced onion
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon nutmeg
  • 2 tablespoons olive oil

How To Make sausage, kale and sweet potato soup

  • Step 1
    Heat oil in a skillet.
  • Step 2
    Add the onion, garlic, celery and bell pepper and saute 5 minutes.
  • Step 3
    Remove casing from the sausage. Cut sausage into slices.
  • Step 4
    Add slices to the skillet and brown.
  • Step 5
    Place the sausage, onion, garlic, celery and peppers in a large soup pot.
  • Step 6
    Add the broth, wine and sugar and bring to a low boil.
  • Step 7
    Add the carrots,sweet potatoes, beans and spices.
  • Step 8
    Reduce heat and simmer stirring occasionally, for 10 minutes or until carrots and potatoes are soft.
  • Step 9
    Add the kale. Simmer for 10 minutes until tender.
  • Step 10
    Add the rice and cook 5 minutes until heated through.
