Ingredients
- 1 pound sweet italian turkey sausage (i like jennie-o lean)
- 8 cups chicken broth, low salt
- 2 large sweet potatoes, peeled and diced small
- 3 cups chopped kale
- 1 cup canned cannellini bean, drained and rinsed
- 1 large carrot, peeled and diced small
- 1 stalk celery, diced small
- 1 cup cooked brown rice
- 1/2 small red bell pepper, diced small
- 1/4 cup white wine
- 1/2 tablespoon sugar
- 1 teaspoon turmeric, ground
- 1 teaspoon oregano, dried
- 1 tablespoon parsley flakes
- 1 tablespoon minced onion
- 1/2 teaspoon minced garlic
- 1/4 teaspoon nutmeg
- 2 tablespoons olive oil
How To Make sausage, kale and sweet potato soup

Step 1Heat oil in a skillet.

Step 2Add the onion, garlic, celery and bell pepper and saute 5 minutes.

Step 3Remove casing from the sausage. Cut sausage into slices.

Step 4Add slices to the skillet and brown.

Step 5Place the sausage, onion, garlic, celery and peppers in a large soup pot.

Step 6Add the broth, wine and sugar and bring to a low boil.

Step 7Add the carrots,sweet potatoes, beans and spices.

Step 8Reduce heat and simmer stirring occasionally, for 10 minutes or until carrots and potatoes are soft.

Step 9Add the kale. Simmer for 10 minutes until tender.

Step 10Add the rice and cook 5 minutes until heated through.
