Ingredients
- 1 pound italian sausage (hot or sweet)
- 2 cups rough chopped spinach
- 1 or 2 cloves garlic
- 2 cans italian style tomatoes (14.5 oz)
- 1 cup sliced carrots
- 1 can great northern beans - undrained (14.5 oz)
- 2 small zucchini or summer squash - cubed
- 1/4 teaspoon black pepper
- 1/4 teaspoon kosher salt
- 2 cans beef or chicken broth 14.5 oz cans.
How To Make sausage and spinach soup

Step 1In stock pot, brown sausage with garlic, stir in broth, tomatoes and carrots. Add salt and pepper, reduce heat, cover ans simmer 15 mins.

Step 2Stir in beans with liquid and squash, cover and simmer for another 15 min or until squash is just tender.

Step 3Remove from the heat and add spinach, replace the cover and allow the heat from the soup to cook the spinach. Ready to serve in 5 min.
