Sausage and spinach soup

With the cold weather coming on, I thought you all might enjoy this to warm you up.

  • 1 lb
    italian sausage (hot or sweet)
  • 2 c
    rough chopped spinach
  • 1 or 2 clove
  • 2 can
    italian style tomatoes (14.5 oz)
  • 1 c
    sliced carrots
  • 1 can
    great northern beans - undrained (14.5 oz)
  • 2 sm
    zucchini or summer squash - cubed
  • 1/4 tsp
    black pepper
  • 1/4 tsp
    kosher salt
  • 2 can
    beef or chicken broth 14.5 oz cans.

How To Make

    In stock pot, brown sausage with garlic, stir in broth, tomatoes and carrots. Add salt and pepper, reduce heat, cover ans simmer 15 mins.

    Stir in beans with liquid and squash, cover and simmer for another 15 min or until squash is just tender.

    Remove from the heat and add spinach, replace the cover and allow the heat from the soup to cook the spinach. Ready to serve in 5 min.
