With the cold weather coming on, I thought you all might enjoy this to warm you up.

Ingredients

  • 1 pound italian sausage (hot or sweet)
  • 2 cups rough chopped spinach
  • 1 or 2 cloves garlic
  • 2 cans italian style tomatoes (14.5 oz)
  • 1 cup sliced carrots
  • 1 can great northern beans - undrained (14.5 oz)
  • 2 small zucchini or summer squash - cubed
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  • 2 cans beef or chicken broth 14.5 oz cans.

How To Make sausage and spinach soup

  • Step 1
    In stock pot, brown sausage with garlic, stir in broth, tomatoes and carrots. Add salt and pepper, reduce heat, cover ans simmer 15 mins.
  • Step 2
    Stir in beans with liquid and squash, cover and simmer for another 15 min or until squash is just tender.
  • Step 3
    Remove from the heat and add spinach, replace the cover and allow the heat from the soup to cook the spinach. Ready to serve in 5 min.
