I created this yummy soup when I lived in San Diego, that is why I call it San Diego Taco Soup!

Ingredients
- 1 can ready cut tomatoes with green chilies and spices
- 4 - boneless skinless chicken thights
- 3 tablespoons olive oil
- 11 ounces can of sweet corn
- 1/3 cup white onion
- 2 tablespoons fresh garlic diced
- 2/3 cup rice
- 1 can vegetarian refried beans
- 2 tablespoons taco seasoning mix
- 32 ounces low sodium chicken broth
How To Make san diego taco soup

Step 1Chop up garlic and onion, place in olive oil and saute'in pan until just clear. Drop chicken thighs into pan with sauted garlic and onion. Brown all together in this pan.

Step 2Puree' the tomatoes in the blender.

Step 3Pour the Chicken broth in a large pot, add the pureed tomatoes, sweet corn, rice, refried beans and saco seasoning. Stir until all are blended.

Step 4After the chicken is browned and well cooked, chop chicken into chunks and add withthe sauteed onion, and garlic into the pot.

Step 5Let cook on medium for about 30 minutes, enough time fo the rice to cook and all ingedients to blend together.

Step 6Garnish with: Shredded Jack cheese, Avacado, Sour Cream, Tortilla chips. YUMMY!
