Ingredients For potato sausage cheese soup (using leftovers)

    shallot, minced
  • 1/2 c
    shredded carrots
  • 2 c
    chicken broth
  • 2 c
    cold mashed potatoes
  • 1 c
    milk
  • 2 c
    cheddar cheese, shredded
  • 6
    breakfast sausage links, cooked and sliced into "coins"
  • 1 Tbsp
    chives, dried
  • salt and pepper, to taste

How To Make potato sausage cheese soup (using leftovers)

    Place shallot and carrots into a large saucepan and add broth. Bring to a boil; turn down to a simmer and cook 5 minutes.

    Stir in potatoes, milk and cheese. Stir until cheese is melted. Add more milk if too thick.

    Stir in sausage "coins" and dried chives and simmer until heated through. Season with salt and pepper.
