Ingredients

  • 1 shallot, minced
  • 1/2 cup shredded carrots
  • 2 cups chicken broth
  • 2 cups cold mashed potatoes
  • 1 cup milk
  • 2 cups cheddar cheese, shredded
  • 6 breakfast sausage links, cooked and sliced into "coins"
  • 1 tablespoon chives, dried
  • salt and pepper, to taste

How To Make potato sausage cheese soup (using leftovers)

  • Step 1
    Place shallot and carrots into a large saucepan and add broth. Bring to a boil; turn down to a simmer and cook 5 minutes.
  • Step 2
    Stir in potatoes, milk and cheese. Stir until cheese is melted. Add more milk if too thick.
  • Step 3
    Stir in sausage "coins" and dried chives and simmer until heated through. Season with salt and pepper.
