Ingredients
- 1 shallot, minced
- 1/2 cup shredded carrots
- 2 cups chicken broth
- 2 cups cold mashed potatoes
- 1 cup milk
- 2 cups cheddar cheese, shredded
- 6 breakfast sausage links, cooked and sliced into "coins"
- 1 tablespoon chives, dried
- salt and pepper, to taste
How To Make potato sausage cheese soup (using leftovers)

Step 1Place shallot and carrots into a large saucepan and add broth. Bring to a boil; turn down to a simmer and cook 5 minutes.

Step 2Stir in potatoes, milk and cheese. Stir until cheese is melted. Add more milk if too thick.

Step 3Stir in sausage "coins" and dried chives and simmer until heated through. Season with salt and pepper.
