polish zupa truskawkowy (strawberry soup)

I've only made this a few times, I had tasted this at some restaurant in New York so I looked it up but could only find different soups that were similar, so I kind of winged it when I was making it but it came out pretty ok. I hope you like it! Also, I put a fresh sprig of chocolate mint to give it a good look and a bite to the taste:)

Ingredients

  • - sugar to taste
  • - kluski noodles, cooked or croutons
  • 1/2 cup whole milk
  • 3 cups strawberries, sliced
  • 6 cups water
  • scoop sour cream
  • 2 tablespoons cornstarch

How To Make polish zupa truskawkowy (strawberry soup)

  • Step 1
    Place strawberries in large pot of water. Bring to boil, reduce heat and simmer until soft. (6-8 minutes)
  • Step 2
    Remove pot from heat.
  • Step 3
    Puree with immersion blender, conventional blender, or food processor.
  • Step 4
    Dissolve cornstarch in milk, temper and whisk into hot soup. Sweeten to taste with sugar.
  • Step 5
    Return to heat, barely bring to boil and simmer 2 minutes, stirring constantly.
  • Step 6
    Portion kluski noodles/croutons into bowls and dallop with sour cream.
