This soup is great to make after the holidays when you have leftover ham on the bone!

Ingredients

  • 2 tablespoons canola oil
  • 1 large onion, chopped
  • 4 sticks celery stalks and leaves, chopped
  • 6 large carrots, scrapped and sliced
  • 4 cloves garlic, minced
  • 1 medium head of cabbage, chopped
  • 1 bunch leeks, root removed, white stalk and 3 inches of green, sliced and well rinsed
  • three - 32 oz boxes of low sodium chicken broth
  • 1 large ham bone with some ham attached
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon thyme, dried
  • 1 teaspoon oregano, dried
  • 1/2 teaspoon fresh ground pepper
  • 2 pounds yucon gold potatoes, cut into 1/2 inch cubes- do not peel
  • 16 ounces can of great northern beans, drain and rinse
  • 5 ounces fresh shaved parmesan cheese

How To Make new year soup

  • Step 1
    In large stock pot, heat oil over medium high heat then add carrots, onion, celery. Cook, stirring frequently for 5 minutes.
  • Step 2
    Stir in garlic, cabbage, and leeks. Stir frequently and cook for 5 additional minutes.
  • Step 3
    Add 3 boxes of chicken brooth, ham bone and spices. Bring to a soft boil. Reduce heat to medium, cover and cook for 20 minutes.
  • Step 4
    Add Potatoes. Cook for 15 minutes covered. Remove ham bone. Cut ham from bone into bite sized pieces and return ham to soup.
  • Step 5
    Stir in Great Northern Beans and continue to cook for 5 additional minutes or until beans are warm.
  • Step 6
    Laddle into bowls and top with sprinkle of shaved parmesan cheese. Enjoy!
