Another recipe from my sweet, and loving Indiana mother-in-law She had a knack for making plain ole ingredients into something delicious. You might be surprised at how good this soup is! She went to town once a week for a few minor supplies. And always made do with what was at home, usually fresh garden grown or home canned food. She raised 6 children with Gods help, and worked hard all her life. Miss you mom... Nancy ...7/11/12

Ingredients

  • 3 tablespoons butter
  • 1/4 cup onion, chopped
  • 6 cups chicken broth
  • - salt & pepper
  • 1/2 cup uncooked oatmeal
  • 1 cup cooked oatmeal

How To Make nellies- homemade oatmeal soup

  • Step 1
    Melt butter in a saute pan over med-low heat. Stir in onion, chopped finely, and stir often. Cook till soft. Add raw oatmeal and stir constantly, over medium - high heat. Until oatmeal is slightly golden. Add a little more butter if needed.
  • Step 2
    Stir in chicken broth and mix well. Bring broth to a simmer and add COOKED oatmeal, stir until mixed. Season with salt and pepper. COOK 5 minutes. Add a little chopped parsley, and serve.
