My own French Pork/Chorizo Soup/Stew

Ingredients
-
2 can(s)beef broth
-
1 can(s)french onion soup
-
1 pkgdry onion soup mix
-
2/3 cchopped onion-red/white or yellow
-
1-2 lbpork stew meat
-
1 tube(s)soy chorizo-use a meat variety if this is not available
-
4 mediumpeeled potatoes cut into 1"-2" pieces
-
2-4 largecarrots-chopped into 1"2" pieces
-
1 bunch(heart) of celery-chopped into 1"-2" pieces
-
2 Tbspminced garlic
-
1-2 can(s)yellow & white corn-or one of each
-
1 cnice red wine-(merlot is great)
-
1 tspmontreal steak seasoning
-
1 tspground cumin
-
1 tspdried oregano
-
·olive oil as needed
-
·cilantro, sour cream, grated cheese for topping
How to Make My own French Pork/Chorizo Soup/Stew
- In a heavy Dutch oven:
1. Add enough olive oil to nearly coat the bottom of the pan - 2. Brown the pork…then add the chopped onions
- 3. Add the entire tube of SOY chorizo (it is soft-not made of meat by-products)
- 4. Add broth, canned onion soup & wine
- 5. Add remainder of ingredients
- 6. Bring all to a boil-then turn down the heat to medium/low and cook for 2-4 hours-Stir occasionally & taste
- 7. Serve with cilantro/sour cream/grated cheese and a warmed loaf of bread of your choice
