Ingredients

  • 1 medium avocado, peeled and coarsely chopped
  • 2 cups milk
  • 1/2 cup purpled onion, minced
  • 1/2 cup chopped green chiles
  • 1/4 cup sour cream
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 dash ground red pepper
  • - crushed tortilla chips, for garnish

How To Make mexican avocado soup

  • Step 1
    Place avocado in the container of an electric blender or food processor, and process until smooth.
  • Step 2
    Combine pureed avocado, milk, and the next 7 ingredients; stir well.
  • Step 3
    Cover and chill thoroughly. Ladle into individual soup bowls. Garnish, if desired.
