Makes a perfect lunch or dinner with some garlic bead and chopped vegetables on the side. Kids as well as adults will love it and put some ranch dressing on the side as well for dipping. If you wanna low-fat use turkey bacon and low fat cheese and sour cream. Simply delicious and reminds me of my moms tasty scalloped potatoes.

Ingredients For mashed potato soup

  • 2 lb
    potatoes
  • 4 slice
    bacon
  • 4 Tbsp
    butter
  • 1/3 c
    flour
  • 4 c
    milk
  • 4 oz
    shredded monterey jack cheese
  • 4 oz
    sour cream
  • 2 Tbsp
    scallions
  • dash
    seasoned salt and pepper

How To Make mashed potato soup

    Prick potatoes with fork and place in a microwave for 15 minutes.

    Let cool, then scoop out potatoes and mash and throw skins in compost.

    Microwave bacon for 3 minutes and save for the toppings. Melt butter, add flour stir, add milk in a large pot or wok and cook until smoothed about 5 minutes.

    Mix in cheese, potatoes, season salt and pepper. Add sour cream to the soup. After fully heated and nice consistency, place in soup bowls and add bacon pieces and cut up scallions
