How to Make Mashed potato soup
- Prick potatoes with fork and place in a microwave for 15 minutes.
- Let cool, then scoop out potatoes and mash and throw skins in compost.
- Microwave bacon for 3 minutes and save for the toppings. Melt butter, add flour stir, add milk in a large pot or wok and cook until smoothed about 5 minutes.
- Mix in cheese, potatoes, season salt and pepper. Add sour cream to the soup. After fully heated and nice consistency, place in soup bowls and add bacon pieces and cut up scallions
