This soup will make your mouth happy! It is quick to put together and only takes an hour to cook. I serve it with Garlic bread to dip in the broth.

Ingredients For mary's italian sausage soup

1 lbmild italian sausage

2yellow onions, chopped

3 or 4 stalkcelery, sliced

2 or 3carrots, peeled and sliced

2 can15 oz. diced italian tomatoes

5 or 6 clovegarlic, minced

1 cchicken broth
-
To tastesalt
-
To tastepepper
-
1 Tbspitalian seasoning

1 tspred pepper flakes or to taste

Handfultubular pasta

parmesan cheese
How To Make mary's italian sausage soup

1In a soup-pot break up and brown Italian Sausage over medium-high heat.

2Add chopped onion, sliced celery, sliced carrots, and garlic. Cook and stir until lightly softened.

3Add tomatoes in their juice. Rinse cans with about 1/2 cup water collecting as much of the remaining juice as possible and add to the pot.

4Add chicken broth and seasonings. Taste checking for flavor. Add more red pepper flakes for additional heat.

5Cover, turning heat to simmer, let cook 45 minutes. It's ok if it boils. Check for flavor at end of 45 minutes.

6Add pasta, cover and cook additional 15 minutes. Less if you want the pasta al dente.

7Serve in soup bowls topped with Parmesan cheese.
