You can easily make this a vegetarian soup. Just leave the ham out and replace the chicken broth with vegetable broth or water.

Ingredients

  • 16 ounces dried lentils
  • 1 can italian crushed tomatoes
  • 1/4 cup celery, diced
  • 1/4 cup sweet onion diced
  • 2 cups chopped fresh spinach
  • 1 1/2 cups cooked, cubed ham
  • 2 cups chicken broth
  • 5 cups water
  • 2 cups diced carrots
  • 1 teaspoon oregano, dried
  • 1 tablespoon basil, dried
  • 1/4 teaspoon garlic powder
  • 1 tablespoon thyme, dried
  • to taste - salt and pepper

How To Make lentil soup

  • Step 1
    Rinse the lentils and place in a slow cooker.
  • Step 2
    Dice onion and celery small. Add to slow cooker.
  • Step 3
    Peel and dice the carrots. Add to cooker.
  • Step 4
    Add the remaining ingredient to the slow cooker. Stir to mix well.
  • Step 5
    Turn the slow cooker on high. Cover and cook for 4 hours.
  • Step 6
    Add more water if necessary. Stir occasionally.
