You can easily make this a vegetarian soup. Just leave the ham out and replace the chicken broth with vegetable broth or water.

Slow Cooker Crock Pot

  • 16 oz
    dried lentils
  • 1 can(s)
    italian crushed tomatoes
  • 1/4 c
    celery, diced
  • 1/4 c
    sweet onion diced
  • 2 c
    chopped fresh spinach
  • 1 1/2 c
    cooked, cubed ham
  • 2 c
    chicken broth
  • 5 c
  • 2 c
    diced carrots
  • 1 tsp
    oregano, dried
  • 1 Tbsp
    basil, dried
  • 1/4 tsp
    garlic powder
  • 1 Tbsp
    thyme, dried
  • to taste
    salt and pepper

How to Make Lentil Soup


  1. Rinse the lentils and place in a slow cooker.
  2. Dice onion and celery small. Add to slow cooker.
  3. Peel and dice the carrots. Add to cooker.
  4. Add the remaining ingredient to the slow cooker. Stir to mix well.
  5. Turn the slow cooker on high. Cover and cook for 4 hours.
  6. Add more water if necessary. Stir occasionally.
