You can easily make this a vegetarian soup. Just leave the ham out and replace the chicken broth with vegetable broth or water.

Slow Cooker Crock Pot

dried lentils
1 can(s)
italian crushed tomatoes
1/4 c
celery, diced
1/4 c
sweet onion diced
2 c
chopped fresh spinach
1 1/2 c
cooked, cubed ham
2 c
chicken broth
5 c
2 c
diced carrots
1 tsp
oregano, dried
1 Tbsp
basil, dried
1/4 tsp
garlic powder
1 Tbsp
thyme, dried
to taste
salt and pepper

How to Make Lentil Soup


  • 1Rinse the lentils and place in a slow cooker.
  • 2Dice onion and celery small. Add to slow cooker.
  • 3Peel and dice the carrots. Add to cooker.
  • 4Add the remaining ingredient to the slow cooker. Stir to mix well.
  • 5Turn the slow cooker on high. Cover and cook for 4 hours.
  • 6Add more water if necessary. Stir occasionally.
