A great Portuguese soup filled with a delicious mixture of chourico and linguica. You can start soaking the lima beans earlier in the day, and then take them out when you are ready to make the soup.

Ingredients

  • 1 pound large lima beans
  • 1 - onion, finely chopped
  • 5 pounds potatoes, cut up
  • 1 1/2 pounds linguica
  • 1/2 pound chourico
  • 2 cans red kidney beans
  • 2 boxes frozen chopped kale
  • 1/2 teaspoon pepper
  • 2 teaspoons salt

How To Make kale soup

  • Step 1
    Soak lima beans for at least an hour, and then cook in a large pot of boiling water for 15 minutes along with chopped onion.
  • Step 2
    Add potatoes, linguica, chourico, salt and pepper. Cook until potatoes are done, about another 15 minutes.
  • Step 3
    Cook frozen Kale in a separate pot for about 20 minutes.
  • Step 4
    When soup is done, add Kale and kidney beans.
  • Step 5
    Enjoy!
