You can start soaking the lima beans earlier in the day, and then take them out when you are ready to make the soup.
1 lblarge lima beans
1onion, finely chopped
5 lbpotatoes, cut up
1 1/2 lblinguica
2 can(s)red kidney beans
2 boxfrozen chopped kale
How to Make Kale Soup
- Soak lima beans for at least an hour, and then cook in a large pot of boiling water for 15 minutes along with chopped onion.
- Add potatoes, linguica, chourico, salt and pepper. Cook until potatoes are done, about another 15 minutes.
- Cook frozen Kale in a separate pot for about 20 minutes.
- When soup is done, add Kale and kidney beans.
