My husband loves spicy soups. This little treasure is for him; garnished with cheese, parsley, and hot pepper flakes, just the way he likes it. This hearty soup makes a satisfying lunch or dinner; when served with fresh fruit and salad. Don't forget a nice soft bread to sop up the juices.

Ingredients
- MEATBALLS
- 1 pound hot Italian sausage, casings removed
- 2 teaspoons extra virgin olive oil
- SOUP
- 1 tablespoon salted butter
- 1/2 cup diced sweet onions
- 1/4 cup diced celery
- 1/4 cup diced sweet red pepper
- 1/3 cup diced carrots
- 1 teaspoon fine sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 - 1 1/2 tablespoons granulated sugar
- 3 cloves garlic, finely minced
- 26 ounces finely chopped tomatoes (mutti) 796 ml
- 4 cups chicken broth
- 3/4 cup pasta, bow tie
- 1/2 cup canned Romano beans, drained, rinsed
- 2 teaspoons fresh oregano, roughly chopped
- 2 sprigs fresh thyme, roughly chopped
- 2 teaspoons fresh basil, roughly chopped
- 1 teaspoon fresh tarragon, roughly chopped
- 1/2 teaspoon red pepper flakes
- GARNISH
- 1/2 cup shredded Pecorino cheese
- 2 tablespoons fresh parsley, roughly chopped
- 1/4 teaspoon red pepper flakes (optional)
How To Make jer's spicy sausage meatball soup

Step 1Meatballs - Pinch off a half a tablespoon-sized chunk of sausage meat and roll into small balls.

Step 2Next place a large cooking pot over medium heat. When hot add olive oil and brown the meatballs in batches. When the meatballs are evenly browned remove them from the pot and set aside until needed.

Step 3Soup - In the same pot you browned the meatballs, add the butter and sauté the onions, celery, red peppers, and carrots until soft; about 5 minutes.

Step 4Then add the salt, pepper, sugar, and garlic to the pan and cook for 1 minute until fragrant.

Step 5Add the tomatoes and chicken broth and bring to a simmer for about 15 minutes.

Step 6Next add the meatballs, pasta, beans, herbs, and red pepper flakes. Cook for 35 - 45 minutes until pasta is tender and meatballs are cooked.

Step 7Serve garnished with cheese and parsley. Red pepper flakes are optional. Hope you enjoy.
