This is out of a church cookbook we bought in August and we've made it 3 times already it is wonderful and very hearty.

Ingredients

  • - 1 lb ground italian sausage (mild
  • - 1 lg onion chopped
  • - 2 stalks celery chopped
  • - 2 med carrots chopped
  • - 8 cups chicken broth
  • - 1-(14oz) can diced tomatoes
  • - 1-(29oz) can tomato sauce
  • - 1 clove garlic crushed
  • 1 tablespoon orengano
  • 1/2 tablespoon dried rosemary
  • 1/2 tablespoon basil
  • 1/2 tablespoon thyme
  • 1 - bay leaf
  • 1/3 cup sugar
  • 1 cup orzo (rice shaped pasta

How To Make italian sausage soup

  • Step 1
    In stock pot cook sausage, carrots, onion and celery until sausage is cooked. Drain fat. Add all other ingredients except pasta. Cover and simmer 1 hour. After an hour add orzo and return to boiling reduce heat and simmer 1 hour,uncovered, stirring frequently. Serve with freshly grated parmesan cheese and crusty bread.
