My in-laws love this stew! I make it about twice a year for them and they usually beg to keep the left overs :)

Ingredients

  • 2 - bay leaves
  • 3 - potatoes, chopped
  • 1/2 cup water
  • 1/2 cup all purpose flour
  • 1 cup white wine
  • 4 cups beef stock
  • 4 cups carrots, diced
  • 1 large onion, chopped
  • 2 large onion, diced
  • 1 1/2 pounds bacon, thickly sliced and diced
  • 3 cloves garlic, minced
  • 6 pounds lamb shoulder, boneless
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon thyme, dried
  • 2 teaspoons white sugar

How To Make irish lamb stew

  • Step 1
    Cook bacon in large, deep skillet. Cook over medium-high till evenly brown. Drain and crumble then set aside.
  • Step 2
    Put lamb, salt, pepper, and flour in large mixing bowl. Toss to coat meat evenly. Brown meat in frying pan with bacon fat/grease.
  • Step 3
    Put meat into crock pot (leave 1/4 cup of fat in frying pan) Add garlic and yellow onion and saute till onion is golden. Deglaze frying pan with 1/2 cup of water and then add garlic-onion mix to crock pot with bacon pieces, beef stock, and sugar. Cover and simmer for 1 1/2 hours.
  • Step 4
    Add carrots, onions, potatoes, thyme, bay leaves, and wine. Reduce heat, simmer 20 minutes or until tender.
