hot and sour shrimp soup (weight watcher)

This is my favorite soup anytime of day! Just imagining the taste makes your mouth water and it is so soothing and delicious. This soup is great when your love ones are sick and don't have any appetite. This will surely bring back the taste to their pallet! YUMMY!!! If you are watching your weight, this your YOUR Soup!

Ingredients

  • 2 pounds uncooked shrimps
  • 2 medium shallots (chopped)
  • 3 cloves garlic (chopped)
  • 2 small red chillies (chopped)
  • 1/4 cup fresh coriander leaves (chopped)
  • 1 tablespoon peanut oil
  • 2 sprigs fresh coriander roots
  • 2 tablespoons fish sauce
  • 2 sticks fresh lemon grass (sliced)
  • 6 small fresh kaffir lime leaves (roughly chopped)
  • 8 cups water
  • 2 teaspoons brown sugar
  • 1/3 cup lime juice
  • 1 teaspoon salt and pepper (more or less)
  • 1 tablespoon dried chopped red chilli peppers (optional)

How To Make hot and sour shrimp soup (weight watcher)

  • Step 1
    Shell and devein the prawns if you need to. Reserve the shells.
  • Step 2
    Heat oil over medium heat in a pan, add prawn shells, garlic and chilies, cook stirring (about 5 minutes or until the shells are red and the mixture is fragrant).
  • Step 3
    Add lemongrass, lime leaves, water, juice, sugar, sauce and coriander roots and simmer covered (for 30 minutes). Add salt and pepper to taste (more or less)
  • Step 4
    Strain the stock.
  • Step 5
    Place the strained stock, prawns, coriander leaves and shallots into a clean pan, and simmer covered (for about 3 minutes until the prawns are tender).
  • Step 6
    Garnish with chopped shallots, and coriander leaves.
