ham and potato soup
This came about because I was feeling lazy and didn’t want to go out to the store. I had some ham in the freezer from the holidays and everything else on hand.

Ingredients
- 5 cups water
- 2 teaspoons chicken base (better than bouillon)
- 1/2 cup chopped onion
- 1/2 cup diced carrots
- 2 - red potatoes, cubed (no need to peel)
- 2 cups cooked ham, cubed
- 1 - bay leaf
- 1/2 teaspoon ground black pepper
- 2 tablespoons dried parsley flakes
- 1 teaspoon mild curry powder
- 1 package (4.1 oz) instant mashed potatoes (idahoan)
- 1 cup milk
- 2 cups cheddar cheese, shredded
- - salt, to taste
How To Make ham and potato soup

Step 1In a large dutch oven, add water, chicken base. onion, carrots and potatoes. Bring to a boil; reduce to a simmer.

Step 2Add ham, bay leaf, pepper, parsley and curry powder. Cover and simmer 30 minutes. Remove bay leaf.

Step 3Add instant potatoes and stir. Cook 5 minutes.

Step 4Add milk and cheese and continue cooking, stirring often, until heated through. Add salt, if needed.
