ham and potato soup

This came about because I was feeling lazy and didn’t want to go out to the store. I had some ham in the freezer from the holidays and everything else on hand.

Ingredients

  • 5 cups water
  • 2 teaspoons chicken base (better than bouillon)
  • 1/2 cup chopped onion
  • 1/2 cup diced carrots
  • 2 - red potatoes, cubed (no need to peel)
  • 2 cups cooked ham, cubed
  • 1 - bay leaf
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons dried parsley flakes
  • 1 teaspoon mild curry powder
  • 1 package (4.1 oz) instant mashed potatoes (idahoan)
  • 1 cup milk
  • 2 cups cheddar cheese, shredded
  • - salt, to taste

How To Make ham and potato soup

  • Step 1
    In a large dutch oven, add water, chicken base. onion, carrots and potatoes. Bring to a boil; reduce to a simmer.
  • Step 2
    Add ham, bay leaf, pepper, parsley and curry powder. Cover and simmer 30 minutes. Remove bay leaf.
  • Step 3
    Add instant potatoes and stir. Cook 5 minutes.
  • Step 4
    Add milk and cheese and continue cooking, stirring often, until heated through. Add salt, if needed.
