I don't know where this recipe originated but I asked an old coworker Ann Lorr for it. She used to bring it for lunch and it would smell so good I had to ask he for the recipe.

3 lb
stew meat, cubed
3 Tbsp
vegetable oil
3 lb
roasted green chilies
potatoes, cubed
1 tsp
1 tsp
cloves garlic, minced
1 qt
vegetable broth
salt and pepper, to taste

How to Make Green Chili Stew from the Palace


  • 1Saute the beef, which has been cut in one-half inch squares, until brown.
  • 2Add the flour, oregano, cumin and garlic and broth and bring to a boil. Place on low heat and simmer 30 minutes.
  • 3Add potatoes and simmer for 40 minutes more.
  • 4Add salt and green chilis and cook for 10 minutes more.
  • 5Serve with white flour tortillas.
