I don't know where this recipe originated but I asked an old coworker Ann Lorr for it. She used to bring it for lunch and it would smell so good I had to ask he for the recipe.

  • 3 lb
    stew meat, cubed
  • 3 Tbsp
    vegetable oil
  • 3 lb
    roasted green chilies
  • 3
    potatoes, cubed
  • 1 tsp
  • 1 tsp
  • 2
    cloves garlic, minced
  • 1 qt
    vegetable broth
  • ·
    salt and pepper, to taste

How to Make Green Chili Stew from the Palace


  1. Saute the beef, which has been cut in one-half inch squares, until brown.
  2. Add the flour, oregano, cumin and garlic and broth and bring to a boil. Place on low heat and simmer 30 minutes.
  3. Add potatoes and simmer for 40 minutes more.
  4. Add salt and green chilis and cook for 10 minutes more.
  5. Serve with white flour tortillas.
