Ingredients

  • 2-3 pounds tomatoes, peeled, seeded and diced
  • 2 cups tomato juice
  • 3-4 cloves garlic, peeled
  • 2 - cucumbers (6 in a piece)
  • 2-3 - jalapenos, seeded
  • 1 cup beef or chicken stock
  • 1/2 cup fresh basil, julienned
  • 1/4 cup evoo
  • 1/3 cup roasted red pepper
  • 1/3 cup red onion
  • 3 slices bread
  • 1 teaspoon each, cumin, salt, pepper
  • 1/3 cup sour cream or regular heavy cream
  • 1/4 cup red wine vinegar

How To Make gorgeous gazpacho

  • Step 1
    Peel, seed and dice the tomatoes and place in a large bowl.
  • Step 2
    Add garlic, one cucumber (peeled and seeded), the chiles (seeded if desired), and red onion to a blender and puree
  • Step 3
    Add puree to the tomatoes.
  • Step 4
    Dice the other cucumber and add the tomato mixture. Add chopped red pepper and basil as well.
  • Step 5
    Add bread to the blender with the tomato juice and puree. Add to the tomato mixture.
  • Step 6
    Add the oil, vinegar and spices. Mix well. Add as much stock as you desire to reach the consistency you wish. Add the cream and mix.
  • Step 7
    Refrigerate for several hours to chill thoroughly.
  • Step 8
    NOTE: to really make this special as an appetizer soup for an important occasion, float tiny cooked shrimp around the perimeter of the bowl and place a smidgen of caviar in the center of each.
