Ingredients
- 2-3 pounds tomatoes, peeled, seeded and diced
- 2 cups tomato juice
- 3-4 cloves garlic, peeled
- 2 - cucumbers (6 in a piece)
- 2-3 - jalapenos, seeded
- 1 cup beef or chicken stock
- 1/2 cup fresh basil, julienned
- 1/4 cup evoo
- 1/3 cup roasted red pepper
- 1/3 cup red onion
- 3 slices bread
- 1 teaspoon each, cumin, salt, pepper
- 1/3 cup sour cream or regular heavy cream
- 1/4 cup red wine vinegar
How To Make gorgeous gazpacho

Step 1Peel, seed and dice the tomatoes and place in a large bowl.

Step 2Add garlic, one cucumber (peeled and seeded), the chiles (seeded if desired), and red onion to a blender and puree

Step 3Add puree to the tomatoes.

Step 4Dice the other cucumber and add the tomato mixture. Add chopped red pepper and basil as well.

Step 5Add bread to the blender with the tomato juice and puree. Add to the tomato mixture.

Step 6Add the oil, vinegar and spices. Mix well. Add as much stock as you desire to reach the consistency you wish. Add the cream and mix.

Step 7Refrigerate for several hours to chill thoroughly.

Step 8NOTE: to really make this special as an appetizer soup for an important occasion, float tiny cooked shrimp around the perimeter of the bowl and place a smidgen of caviar in the center of each.
