I received this recipe in an email from Alternative Healthcare Center in Cary, NC. It sounded so delicious and healthy that I thought I would share. Enjoy!

Ingredients

  • 2 cups greek yougurt
  • 1 cup cold chicken or vegetable stock
  • 2 cloves garlic, crushed
  • 2 tablespoons chopped chives, and more for garnish
  • - juice of 1 lemon
  • 1 large cucumber peeled and grated
  • 1 tablespoon chopped fresh mint
  • - salt and freshly ground pepper to taste

How To Make garlicky cucumber soup

  • Step 1
    Combine the yogurt, stock, garlic, chives and lemon juice in a large bowl. Add the cucumber, stir well, and season with salt and pepper to taste. Chill for at least 1 hour.
