Ingredients
- 2 cups greek yougurt
- 1 cup cold chicken or vegetable stock
- 2 cloves garlic, crushed
- 2 tablespoons chopped chives, and more for garnish
- - juice of 1 lemon
- 1 large cucumber peeled and grated
- 1 tablespoon chopped fresh mint
- - salt and freshly ground pepper to taste
How To Make garlicky cucumber soup

Step 1Combine the yogurt, stock, garlic, chives and lemon juice in a large bowl. Add the cucumber, stir well, and season with salt and pepper to taste. Chill for at least 1 hour.
