Easy, great soup for a cold winter meal !!! (or this recipe can be served for a special occasion)

Ingredients

  • 6-8 - yellow cooking onions, nice size
  • 3-4 boxes low sodium beef boullion
  • 1 bottle red cooking wine, or whatever wine you have opened in the house
  • 1 stick butter
  • 3 tablespoons kitchen bouquet
  • - water, add as needed
  • - (if you like to make your own beef stock, fantastic, i always simply buy it - or if i decide to make it & i don't have any stock in the house, i'll use boullion or soup base (beef flavored)
  • 2 tablespoons black pepper
  • 1 - loaf of french baguette bread
  • 1 pound provolone cheese, sliced medium

How To Make french onion soup

  • Step 1
    Peel, slice & saute onions in the stick of butter add pepper, let them get a little brown - then add all of the beef stock, wine & water, if needed ~ (I use a Dutch Oven to make this soup in)
  • Step 2
    Bring to a rolling boil - then turn down to low-simmer! Cook for about 2-3 hours - Slice French Baguette bread in 1/2" slices, spread a little butter & broil in oven, till lightly browned ~
  • Step 3
    When just about ready to serve, put a few ladles of soup in an oven-proofed bowl or individual soup toureen - put a piece of the Baguette on top, then top off with a nice thick slice of Provolone cheese, broil till the cheese gets brown & bubbly !!! Serve - be careful not to burn your mouth - you will love this soup !!!!!
