1Peel, slice & saute onions in the stick of butter add pepper, let them get a little brown - then add all of the beef stock, wine & water, if needed ~ (I use a Dutch Oven to make this soup in)
2Bring to a rolling boil - then turn down to low-simmer! Cook for about 2-3 hours -
Slice French Baguette bread in 1/2" slices, spread a little butter & broil in oven, till lightly browned ~
3When just about ready to serve, put a few ladles of soup in an oven-proofed bowl or individual soup toureen - put a piece of the Baguette on top, then top off with a nice thick slice of Provolone cheese, broil till the cheese gets brown & bubbly !!! Serve - be careful not to burn your mouth - you will love this soup !!!!!
