I don't know where I got this recipe. It is a delicious main course served with rye bread, cheese, cold cuts. Then off to the sauna and a roll in the snow.

Ingredients

  • 1 pound beef; trimmed of fat and cut into small cubes
  • 1 - ham bone or a few chunks of smoked ham
  • 3 cups sauerkraut
  • 6 cups beef stock
  • 2 - bay leaves
  • 10 - whole allspice
  • - salt and pepper
  • - garnish with dollops of sour cream

How To Make finnish sauerkraut soup

  • Step 1
    Place all ingredients into a large saucepan. Bring to a boil, reduce heat and simmer. partially covered, for about 2 1/2 hours over medium-low heat.
  • Step 2
    Season with salt and pepper to taste. Remove allspice and bay leaves.
  • Step 3
    When ready to serve, ladle into bowls and top with a spoonful of thick sour cream.
