This soup was a pure accident...2 times.I started out making mashed potatoes, added avocado instead of butter and it ended up soup. My family loves it!!!

Ingredients

  • 3 pounds red potatoes
  • 3 - very ripe avocadoes
  • 1/2 cup finely chopped onion
  • 1 cup chopped tomato
  • 1 teaspoon ground or fresh nutmeg
  • - salt and pepper to taste

How To Make easy easy avocado soup

  • Step 1
    Thoroughly scrub potatoes,do not peel, put in large pot to boil. Add salt
  • Step 2
    While potatoes are boiling lightly saute' onions in olive oil
  • Step 3
    cut avocados in half and scoop out the insides into a small bowl...set aside
  • Step 4
    When potatoes are tender, drain and add back to pot.Add avocado and sauteed onion. With handmixer, beat thoroughly. You beat it until it gets soupy...trust me, it will.Add salt and pepper to taste. Finally add nutmeg.
  • Step 5
    Serve with chopped tomatoes on top.
