    seedless cucumber, peeled & diced
  • 1/2 c
  • 1 c
    plain greek yogurt (0%)
  • 1
    green onion, diced
  • 1 tsp
    dijon mustard
  • 2 Tbsp
    fresh parsley
  • 1 tsp
    salted herbs

How to Make Cold Cucumber Soup


  1. Add all of the ingredients to food processor & blend until smooth.
  2. Refrigerate for at least 4 hours. Very important, because the refrigeration will change the flavor & consistency of the soup.
  3. Serve chilled, garnish with cucumber slices and fresh dill.
