Ingredients

  • 1 cup seedless cucumber, peeled & diced
  • 1/2 cup water
  • 1 cup plain greek yogurt (0%)
  • 1 - green onion, diced
  • 1 teaspoon dijon mustard
  • 2 tablespoons fresh parsley
  • 1 teaspoon salted herbs

How To Make cold cucumber soup

  • Step 1
    Add all of the ingredients to food processor & blend until smooth.
  • Step 2
    Refrigerate for at least 4 hours. Very important, because the refrigeration will change the flavor & consistency of the soup.
  • Step 3
    Serve chilled, garnish with cucumber slices and fresh dill.
