I enjoy playing with different ingredients in every recipe I make. This time it was soup. Loving chicken soup all my life and making it the same basic way all the time decided to add some fruit flavors that I had available. Every ingredient blended so well together and everyone loved it! I didn't add noodles however, you can add if you like. It's so sweet & the most tasty soup I've made so far. Hope you enjoy it as much as we all did!

Ingredients

  • 1 lg. - chicken breasts, whole
  • 3 cups baby carrots
  • 3-4 - baby potatoes
  • 2 stalks celery
  • 2 medium onions
  • 1 medium apple
  • 1 medium red pear
  • 1-1/2 quart vegetable & chicken stock
  • 2 - bay leaves
  • 1/2 can peas, canned

How To Make chicken fruit & veggie soup!

  • Step 1
    peel skin from chicken & discard. Leave bones in
  • Step 2
    Heat about 1-1/2 qts. water till boiling, place chicken in the pot, cover & reduce to low/warm Add Stock(s). I used whatever was in the fridge which was chicken stock & then added vegetable stock enough to cover 5"
  • Step 3
    Cut carrots lengthwise and slice into different shapes (halves/spears/rounds, etc.) Do the same with pear & apple Cut onion & slice into sm/med pieces
  • Step 4
    Turn stove on high, add fruits & veggies & at the end of cooking time add the peas
