cheeseburger soup

My nephew is in the Military and while he was teaching at West Point he would have a few soldiers over to his home for some good home made food. He got this recipe from me and told me that his men really enjoyed this soup. I mentioned to him to serve it with nice hot home made Beer bread. YUM!!

Ingredients For cheeseburger soup

  • 1/2 lb
    ground beef
  • 1 Tbsp
    butter, room temperature
  • 1 tsp
    parsley flakes
  • 1 tsp
    dried basil
  • 3/4 c
    chopped onion
  • 3/4 c
    celery
  • 3/4 c
    shredded carrots
  • 3 c
    chicken broth
  • 4 c
    diced potatoes
  • 1 1/2 c
    milk
  • 3 Tbsp
    flour
  • 3/4 tsp
    salt
  • 1/2 tsp
    pepper
  • 8 oz
    american cheese
  • 1/2 c
    sour cream

How To Make cheeseburger soup

    In a 3 quart saucepan, brown beef, drain & set aside. Using the same saucepan, saute' onion, carrots, celery and add the basil and parsley in 1 tablespoon of butter. (about 8 minutes)

    Next add the chicken broth and diced potatoes and the browned beef. Bring to boil, reduce heat, cover & simmer 10 -12 minutes. Make sure your potatoes are done.

    I then add some flour to my milk and shake until blended. Pour milk into saucepan and stir until blended. The flour should thicken the broth some. Cook 2 minutes. Reduce heat to low and add the American cheese and stir until cheese melts. You can add a dollop of sour cream just before serving, if you prefer.
