blondie's tomato basil soup

After eating tomato basil soup in several places, about 5 years ago, I tried my hand at it. Tis is what I came up with on the 1st try, so I've never changed it. I've eaten this type soup at several restaurants, but none are as good as mine (but I eat it anyway!)

Ingredients

  • 2 cups fresh ripe tomatoes, peeled and diced
  • - ~~~or~~~
  • 15oz cans petite diced tomatoes
  • 15oz cans tomato sauce
  • 4 tablespoons real butter
  • 3 tablespoons fresh chopped basil
  • - ~~~or~~~
  • 1 tablespoon dried basil
  • 1/2 teaspoon white pepper, optional
  • 1/2 cup half and half
  • - ~~~or~~~
  • 1/2 cup heavy cream
  • - salt to taste
  • 4 slices heavy grainy bread, toasted or not

How To Make blondie's tomato basil soup

  • Step 1
    In a heavy saucepan combine all soup ingredients, except cream. Simmer on med-lo till it comes to a slow boil. Turn burner down to low and simmer for 10 minutes. Stir the soup constantly till cooked.
  • Step 2
    Remove from heat and stir in half and half or heavy cream.
  • Step 3
    Serve with the bread. NOTE: If desired you can eat this with a grilled cheese on the grainy bread, so 8 slices wll be needed. Grill with cheese of choice. I recommend swiss or gruyere.
