betty's bavarian potato, sausage and bacon soup
This is one of my families favourites. A creamy potato soup, with lashings of bacon and German style sausages - this is a meal in a bowl with a real Bavarian flavour. Serve with crusty bread and butter. We used to live and hour away from the the most amazing German restaurant. We moved and that restaurant is now now 28 hour drive away. This recipe took many attempts to get it just right, I'm keeping it here so I don't lose it - ever. As we have lactose intolerant family members, I use lactose free milk.

Ingredients
- - 2 tablespoons butter
- - 1/2 pound bacon, diced
- - 1 large onion, diced
- - 1 large onion, diced
- - 2 celery stalks, diced
- - 8 cups beef stock
- - 2 bay leaves
- - 1 teaspoon marjoram
- - 1 teaspoon fennel seeds
- - 8 juniper berries
- - 1/2 teaspoon black pepper
- - 1/2 cup chopped parsley
- - 1.5 lb (750g) red "desiree" potoates, peeled and chopped small
- - 5 contiental sausages (i like knackwurst), sliced into coins
- - 3 1/2 cups milk
- - 1 cup powdered, dried potatoes
How To Make betty's bavarian potato, sausage and bacon soup

Step 1Make sure you have pre-chopped all your veggies and bacon.

Step 2In a large stock pot heat the butter. Add the bacon and all the veggies - yes all. Over a medium heat stir continually and cook for 10 minutes.

Step 3Add the stock, herbs, pepper. Simmer over a low heat for 30 minutes.

Step 4Add the milk and the chopped German Sausages. Add the powdered potatoes and stir well ensuring no lumps. Simmer for a further 5 minutes.

Step 5If you can find the juniper berries and bay leaves, remove them. If you can't. Just pre warn your guests or family NOT to eat them,

Step 6Serve with crusty bread and enjoy!
